Chicken Curry recipe

Scared of curry? Don't be!
Some people assume all curry is spicy, and therefore not family friendly. But you can absolutely make a mild curry. And the recipe I'm sharing here has been a kid favorite in our house for at least 12 years. Matthew asked for this for his birthday meal many times.
Curry is seasoned with flavorful, healing and warming spices. So, it tastes amazing and has wonderful health benefits.

CHICKEN CURRY RECIPE
Serves 6
Step 1:
1 onion chopped*, 4 Tbl. Butter.
Sauté onion in butter until just tender.
Step 2:
Add in 2-3 Tbl. curry powder and 2 tsp. salt.
Step 3:
Add 4 Tbl. unbleached flour to make a roux. Stir the flour in the butter mixture until it thickens.
Step 4:
Slowly add 2 c. milk and 2 c. broth, making sure your mixture blends and thickens with each addition.
Step 5:
Add in a combo of 3-4 cups chopped chicken and vegetables of your choice (we like these: carrots, zucchini, spinach, bell peppers, green beans, broccoli).
Simmer until veggies are tender.
Step 6:
Taste and adjust seasonings. Serve over rice*.
Optional toppings*: flaked coconut, peanuts, raisins, cilantro, avocado.
NOTES:
If your kids absolutely won't eat onion, skip this step and add in some onion powder when you add in the curry seasoning.
Nutrition boosts: Use as many organic ingredients as you can, use pasture raised chicken, use homemade broth, use raw or A2 milk, use real sea salt, cook your rice with some broth.
The toppings really make this extra yummy! Use what your family likes, but they are fun and delicious.
Making rice in the Instant Pot is super easy. Start it before you work on the curry and it will be completely done when the curry is ready.
