This recipe is very adaptable!
You can swap ingredients for what you have on hand or prefer.
I love that it just uses one pan!
Get the best quality sausage you can find and afford. I love the flavor of the pastured pork sausage I get from my local farmer, but even more importantly, good quality sausage will have a healthy fat composition!
I mention in the recipe that I like the skin ON my potatoes, this is because the potato skin contains a good amount of iron. So wash them well and chop with the skin on for more nutrients.
Breakfast Skillet Hash Recipe
serves 4
Ingredients:
1/2 lb. ground breakfast sausage
1 c. chopped peppers
1/2 c. chopped onion
2 c. chopped potatoes (white, sweet or a combo), I like the skin on
8 eggs
salt and pepper to taste
Instructions:
Brown sausage in a large skillet over medium heat. Add healthy fat if it sticks.
When cooked through, remove the sausage into a bowl and set aside.
Add potatoes to the same skillet, adding fat as needed to prevent sticking.
Stir potatoes so they cook evenly. When they start to get tender, add the onions and peppers.
Cook all together until it all tender and cooked through.
Scramble the eggs in a separate bowl. (I like to add a splash of milk or cream.)
Add sausage back to pan. Then pour in scrambled eggs.
Add salt and pepper to taste and cook until the eggs are just done. Don't overcook.
Optional: serve with shredded cheese.
Serve immediately. Or refrigerate up to 5 days.
